Sun-dried Tomato Pesto

Homemade Sun-dried Tomato Pesto is quick and easy to prepare and makes a great meal prep item to have in the fridge. You can use it on zucchini pasta, salad, sandwiches or as a dip! This pesto is Dairy Free, Gluten Free, Vegan and Paleo.

Sun-dried Tomatoes are rich in Vitamin C, a powerful antioxidant that limits the damage of free radicals and boosts immune function. They also contain high levels of Vitamin A and E!

Something you may not know about Sun-dried Tomatoes, is their high protein content. 1 cup has 8g of protein. Combined with the pine nuts, this batch has 12.6g of protein.

For this recipe you will need:

  • 1 cup of Organic Sun-dried Tomatoes
  • 1/4 cup fresh Organic Basil Leaves
  • 1/4 cup Pine Nuts
  • 6 tbsp Extra Virgin Organic Olive Oil
  • 1-2 cloves of Garlic

If you have dehydrated Sun-dried Tomatoes, be sure to rehydrate them first. Simply soak them in warm water for 15-20 minutes and then drain.

Combine the ingredients in a food processor or high powered blender and store in an air tight container in the fridge.

Here's a super simple way to use your pesto. Just spiralize some zucchini, wash and prepare white beans and top with pea shoots, pesto and fresh lemon juice. Yum!
