Goji Almond Granola

Granola is super easy to make and great to have in your pantry for an easy breakfast or snack. We love this Goji Almond Granola that's full of rich antioxidants, fibre and protein. You can enjoy knowing it's a wholesome, refined sugar free blend of nuts, seeds and whole grains. It's just sweet enough, but feel free to adjust according to your taste buds.

Goji Almond Granola (Vegan, Gluten-Free, Dairy-Free)

You will need:

4 cups gluten free rolled oats

1 cup slivered almonds

1/4 cups seeds (chia, pumpkin, sunflower, hemp, sesame - whatever you like)

1/4 cup goji berries

1/4 cup melted coconut oil

1/4 cup maple syrup

1 tbsp cinnamon

1 tsp pure vanilla extract

pinch of himalayan or sea salt

 

Preheat oven to 350F. Combine the wet (coconut oil, maple syrup, vanilla) in a large mixing bowl and then add dry ingredients and mix until well coated. Spread on a cookie sheet and bake for approximately 30 minutes or until golden brown. Let cool completely and store in an air tight container.
